The charoli is considered to be the evergreen medicinal plant of India. Charoli is an evergreen tree which is generally native in India and can be found in abundance in the north-western part of the country. Now the Latin name of charoli is Buchanania lanzan and it is known by various names in the country. Shahee Paneer Gravy
- 200 grams paneer diced into cubes and lightly sautéed in ghee
- 200 grams charoli, ground to fine paste with water
- 1 capsicum, diced
- 2 green chillies, split vertically
- ½ cup green peas, boiled
- 1 tomato-- paste or chopped fine
- ¼ cup carrots diced and boiled
- 1 inch ginger finely chopped
- 4 cloves of garlic, smashed
- 1 spoon jeera powder, ¼ teaspoon red chillie powder and ¼ spoon turmeric powder
- 2 cloves, 2 cardamom pods, 1 stick cinnamon, 2 star anise, 5 pepper corns, 2 bay leaves
- Curry leaves, coriander leaves
- Oil, salt to taste
- Put oil or ghee in a pan. Be generous with oil.
- When hot add ginger followed by jeera and then cloves, cardamom, cinnamon, star anise, pepper corns, curry leaves and bay leaves.
- Stir for a half minute and add garlic.
- Add tomato and chilly powder and turmeric powder and stir until tomato softens.
- Add boiled peas, paneer, capsicum and green chillies and stir until masala mixes.
- Add a little bit of salt. Stir.
- Add a few spoons of water and stir.
- Now add water and let boil until capsicum and green chillies cook a bit and then add chironji paste and stir at low heat.
- Add water to make a gravy as thick as you like.
- Cook a bit until oil separates.
- Remove, garnish with coriander leaves, a sprinkling of garam masala powder and lemon juice. Enjoy with Naan.
Gulab Charoli Lassi
- 200 to 400 grams curds that have not gone sour
- ½ cup rose petals ground to fine paste
- 3 spoons of charoli seeds, lightly roasted in pan
- 50 to 100 grams sugar powder
- Pinch of salt
- Pinch of elaichi powder
- Rose syrup
- Chill curds and then put in a blender and run it until curds become smooth and then keep adding water until you get a smooth paste and then keep adding more water until you get the desired thick lassi consistency you like.
- Add rose petal paste and give it a whir and then add sugar powder and buzz until sugar dissolves and remove.
- You can use hand blender too.
- Add a pinch of salt and elaichi powder.
- Pour into glasses, top off with rose syrup, sprinkle charoli seeds and a couple of rose petals and chill before serving.
- You might want to embellish it with a dollop of cream.
- This is a cooling, energy-giving drink in summer, perfect for when you return after a hot day in the sun.

Eating chironji is fun and for me its taste is better than that of almonds or cashew nuts. Chironji has a unique taste. While eating it gives me benefits of vitamin A, C, calcium, amino acids, proteins, linoleic acid, cardanol and anacardic acid, applying the paste to my face removes blemishes and gives my skin a fresh clean look. Simplest way to eat it is to add it to any sweet dish. A typical Indian dish is something like this: Boil a litre of milk over a low flame until it reduces to 250 ml. Add 50 grams sugar and stir until it dissolves. Separately soak saffron in some warm milk to which you add a spoon of cornflour. Let the reduced milk mixture cool and add saffron and cornflour mix. Pour in moulds, garnish generously with roughly crushed chironji seeds. Freeze and enjoy rabdi kulfi.

Indian sweets without charoli? Unthinkable. Apart from its nutty flavor and delicious taste, charoni contains cardanol, anacardic acid and maleic acid besides calcium, iron, vitamin B2, C, B1 and phosphorus. Our elders always say charoli keeps you cool and eating it is helpful for gall bladder and liver.
